Ingredients
Lemon Pepper Chicken
- 1 kg boneless chicken thighs (skin off or on according to preference)
- 1 tbsp olive oil
- 6 tbsp Misty Gully Extra Zesty Lemon Pepper Seasoning
- 2 lemons, halved
- Fresh parsley, to serve
Herby Couscous
- 1½ cups couscous
- 1½ cups boiling water
- 1 tbsp olive oil
- ½ cup flat-leaf parsley, roughly chopped
- ¼ cup fresh mint, roughly chopped
- Zest of ½ lemon
Lemon Yoghurt
- 200 g Greek yoghurt
- 1 tbsp fresh lemon juice
- ½ tsp finely grated lemon zest
- 1 tbsp olive oil
Method
- Season the chicken
Place the chicken thighs in a large bowl. Add the olive oil and Misty Gully Extra Zesty Lemon Pepper Seasoning, then toss until the chicken is evenly coated.
For even better flavour, cover and refrigerate for 30 minutes before cooking. If you’re short on time, you can cook them straight away. - Make the lemon yoghurt
Combine the Greek yoghurt, lemon juice, lemon zest and olive oil in a small bowl. Mix until smooth, then refrigerate until you’re ready to serve. - Make the couscous
Place the couscous in a large heatproof bowl. Pour over the boiling chicken stock, cover and leave for 5 minutes.
Fluff the couscous with a fork, then stir through the olive oil, parsley, mint and lemon zest. Set aside. - BBQ the chicken
Preheat your BBQ or grill to medium-high heat.
Cook the chicken thighs for approximately 5–6 minutes per side, or until nicely charred on the outside and cooked through. Chicken should reach an internal temperature of 75°C at its thickest point.
While the BBQ is hot, place all of the lemon halves cut-side down on the grill for a couple of minutes until lightly charred. - Bring it all together
Spoon the herby couscous onto a large serving platter and arrange the BBQ lemon pepper chicken over the top.
Add a generous dollop of lemon yoghurt, scatter over a little fresh parsley and serve with the charred lemon.
Squeeze the grilled lemon over the chicken just before digging in.

Don’t be shy with the char. Those caramelised, crispy edges on the chicken are where the Lemon Pepper Seasoning really comes alive, and the same goes for the lemon halves!
